Eggplant often scares people but there are a couple of simple techniques that first prepare the eggplant for cooking and then also important notes for how eggplant cooks that make it sweet and palatable. In this class we will learn how to prepare the eggplant for cooking and from there how to bread eggplant, in itself probably the most useful technique.
We’ll prepare a vegan eggplant parmesan, the middle eastern classic, baba ganouj and a “pickled” eggplant in an Indian style. We will also learn simple techniques for how to bake and shallow fry eggplant along with suggestions for seasoning simple eggplant dishes. Finally we’ll prepare eggplant steak with lemon dill sauce.
