  • Macro Mash – millet, cauliflower and amaranth with roasted garlic and nutritional yeast
  • Seitan of the Dawn – marinated with coriander and lemon, with spiced carrot sauce and seasonal vegetable
  • Potato chukander – Potato and beet in tomato-cumin sauce
  • Aromatic Black Eyed Peas – a rich dal with mushroom and tomatoes, spiced with coriander cumin and turmeric
  • Old World Salad – faro-barley salad with cucumber, caraway and nori
  • Tofu Dijon – savory seitan (wheat protein) in rich mustard sauce with vegetables
